In 2013, when I was providing a gourmet meal service to families in the Boulder area, one of my clients asked me to bake cookies for her son, who required a grain free diet because he suffered from Lyme disease. So I used my culinary training to create a new, almond flour based cookie that he could eat, and that would not sacrifice flavor.
